Crunchy lemon slaw Recipe
- 1/2 small red cabbage
- 1/2 white cabbage
- 3 carrots
- 2 apples
- 100g raisins
- Juice of 2 lemons
- 3 tbsp mayo
- 4 tbsp yogurt
- 1 tbsp horseradish sauce
- Serve with 3 tbsp sesame seeds
- and a large handful fresh mint, finely chopped
Cut the red and white cabbage into quarters, remove the stalks, then shred – keep it quite chunky.
Add to a bowl, then grate in the carrots and apples, stir in the raisins and lemon juice, and leave for 10-15 mins.
Mix all the dressing ingredients together, pour over the cabbage mix and stir. Sprinkle with sesame seeds and mint to serve, if using.
