Hot Cross Buns Recipe
Ingredients
- 350ml (12fl oz) soya milk, warmed through
- 50g (13⁄4oz) dairy-free margarine or butter
- 1 free-range egg, beaten
- 500g (1lb 1oz) gluten-free flour
- 1 tsp salt
- 75g (23⁄4oz) caster sugar
- 1⁄2 tsp xanthan gum
- 11⁄2 tsp fast-action yeast
- 1 tsp extra-virgin olive oil
- 75g (23⁄4oz) sultanas
- 50g (13⁄4oz) mixed peel finely grated zest of 1 orange
- 1 tsp mixed spice
- 1⁄2 tsp cinnamon
- 75g (23⁄4oz) gluten-free white fl our
- water
- 3 tbsp gluten-free apricot jam, warmed
Preparation Method
For the buns, sieve the flour and add all the dry ingredients such as salt, sugar, yeast and xanthan gum. Heat the milk and margarine until the mixture is warm to the touch. Add the milk mix and beaten egg, then bring together with a wooden spoon. Place the dough in a bowl, covered with cling film, then leave it in a warm place for 1 hour or until doubled in size.
Add the oil, sultanas, mixed peel, orange zest, mixed spice and cinnamon and mix through. Cover with clingfi lm and leave in a warm place for 1 hour or until it has doubled in size. Preheat the oven to 200oC/Gas Mark 6.
Shape into 15 pieces and place on a baking sheet. Mix the flour and a little water to a paste and pipe onto the buns as a cross . Bake in the oven for about 20 minutes until golden brown . Bush the jam over the top of the warm buns and leave to cool.
