This quick peach cobbler recipe is one of our most popular desserts and is the fantastic ending to every summer meal.

Ingredients

  • 8 large peaches, peeled, halved and sliced
  • 3 cup sugar, divided
  • 1/2 tsp cinnamon (UK)*
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cup flour
  • 4 tsp baking powder (UK)*
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 1 1/2 cup milk

Preparation Method

  1. In large bowl, put peaches, 1/2 tsp cinnamon, together with 1 1/2 cups of the sugar. Put aside.
  2. Melt butter into a 13×9 oval shaped ceramic baking dish (use the microwave or prepare it in the water bath) or pan (put pan to the oven).
  3. In an additional sizeable bowl, whisk flour, baking powder, salt, 1/2 tsp. cinnamon with 1 1/2 cups of sugar until combined. Stir in milk and vanilla till simply combined – do not over mix.
  4. Pour batter gently over butter evenly. Top batter smoothly with peach slices. Drizzle all leftover sugar mixture over peaches.
  5. Bake at 375°F (190°C) for 45-50 mins till top is done.
  6. Taste best served with vanilla or butter pecan ice cream when still warm!
