Dumplings Ingredients

  • 1.2 kg potatoes
  • 6-8 tablespoons all-purpose flour
  • 1 tablespoon potato starch
  • 1 onion
  • 100 g smoked bacon
  • 2 tablespoons oil for frying
  • Salt, to taste
  • Optional – a pinch of citric acid or lemon juice to prevent potato discoloration

How to make gray potato dumplings

  1. Prepare the potatoes
    Peel and rinse the potatoes, then grate them finely using the smallest holes on a grater. Place the grated potatoes in a sieve or cheesecloth and squeeze out as much excess moisture as possible.
  2. Make the dumpling dough
    Transfer the drained potato pulp to a mixing bowl. Add a pinch of citric acid or a few drops of lemon juice to help maintain colour (optional). Stir in the all-purpose flour and potato starch. Mix everything thoroughly with a spoon until a smooth, thick batter forms.
  3. Cook the dumplings
    Bring a large pot of salted water to a boil. Using a spoon dipped in hot water (to prevent sticking), scoop portions of the potato mixture and drop them into the boiling water. Once the dumplings float to the surface, cook them for about 8-9 minutes.
  4. Prepare the bacon and onion topping
    Dice the onion and cut the smoked bacon into strips. In a frying pan, heat the oil and saute the bacon until golden and crispy. Add the onion and cook until it becomes soft and translucent.
  5. Combine and finish
    Using a slotted spoon, transfer the cooked dumplings straight from the pot to the pan with the bacon and onion. Toss gently and let everything cook together for 3-4 minutes, allowing the flavours to blend beautifully.
  6. Serve and enjoy
    Serve the dumplings hot, either on their own or with a fresh salad on the side.
