  5. Pour the egg mixture back into the saucepan with the remaining milk and whisk until smooth.
  6. Cook over medium heat, whisking constantly, until the mixture thickens and comes to a boil.
  7. Boil for one minute while whisking constantly.
  8. Remove from heat and transfer to a bowl.
  9. Cover with plastic wrap directly on the surface of the cream to prevent a skin from forming.
  10. Chill in the refrigerator for at least two hours before using.

TIPS
Make sure to whisk constantly while cooking to prevent lumps from forming. If you do get lumps, you can strain the mixture through a fine-mesh sieve before chilling.
