This warm salad is brilliant combination of salty and sweet, spicy and cool. Plus the sweet potatoes keeps you fuller for longer.

The 'Chorizo and Sweet Potato Salad' is super simple recipe for everyone. Try and you will be surprised how full you can be after eating 'salad'.

For a healthier version take on the dinner, microwave the sweet potatoes (just for a few minutes) and then grill the chorizo sausage.

Chorizo and Sweet Potato Salad Recipe

4 Serves


  • 4 sweet potatoes, peeled and cut into small wedges
  • 3 tbsp Olive oil
  • 200g chorizo sausage, chopped
  • 240g can chickpeas, drained
  • 180g bag mixed herb salad
  • 170g tub tzatziki

Preparation Method

1. Heat the oven to 200°C ( 180°C fan or gas 6). Put the sweet potatoes in a large roasting tin and drizzle over the olive oil. Season well and roast for 20 minutes until softened and just beginning to colour.
2. Scatter oven the chorizo and cook for a further 5 minutes. Remove from the oven and stir through the chickpeas.Serve on the bed of mixed herb salad with the tzatziki drizzled over.
