Ingredients
- 350ml (12fl oz) almond milk (UK)*, warmed through
- 50g dairy-free margarine or butter
- 1 free-range egg, beaten
- 500g gluten-free flour (UK)*
- 1 tsp salt
- 75g caster sugar (UK)*
- 1⁄2 tsp xanthan gum (UK)*
- 1⁄2 tsp fast-action yeast (UK)*
- 1 tsp extra-virgin olive oil (UK)*
- 75g sultanas (UK)*
- 50g mixed peel finely grated zest of 1 orange
- 1 tsp mixed spice
- 1⁄2 tsp cinnamon (UK)*
FOR THE CROSS
- 75g gluten-free white flour (UK)*
- water
FOR THE GLAZE
- 3 tbsp gluten-free apricot jam, warmed (UK)*

How to make gluten free Hot Cross Buns
- For the buns, sieve the flour and add all the dry ingredients such as salt, sugar, yeast and xanthan gum. Heat the milk and margarine until the mixture is warm to the touch. Add the milk mix and beaten egg, then bring together with a wooden spoon.
- Place the dough in a bowl, covered with cling film, then leave it in a warm place for 1 hour or until doubled in size.
- Add the oil, sultanas, mixed peel, orange zest, mixed spice and cinnamon and mix through. Cover with clingfi lm and leave in a warm place for 1 hour or until it has doubled in size.
- Preheat the oven to 392°F (200ºC).
- Shape into 15 pieces and place on a baking sheet. Mix the flour and a little water to a paste and pipe onto the buns as a cross . Bake in the oven for about 20 minutes until golden brown . Bush the jam over the top of the warm buns and leave to cool.
