A picnic's not a picnic without coleslaw - try this fresh version. Very simply jet delicious Coleslaw salad but with hint of a lemon.

Crunchy lemon slaw Recipe

6 Servings


  • 1/2 small red cabbage
  • 1/2 white cabbage
  • 3 carrots
  • 2 apples
  • 100g raisins
  • Juice of 2 lemons
For the Dressing
  • 3 tbsp mayo
  • 4 tbsp yogurt
  • 1 tbsp horseradish sauce
  • Serve with 3 tbsp sesame seeds
  • and a large handful fresh mint, finely chopped

Preparation Method

Cut the red and white cabbage into quarters, remove the stalks, then shred – keep it quite chunky.

Add to a bowl, then grate in the carrots and apples, stir in the raisins and lemon juice, and leave for 10-15 mins.

Mix all the dressing ingredients together, pour over the cabbage mix and stir. Sprinkle with sesame seeds and mint to serve, if using.
