The ‘Chorizo and Sweet Potato Salad’ is super simple recipe for everyone. Try and you will be surprised how full you can be after eating ‘salad’.
For a healthier version take on the dinner, microwave the sweet potatoes (just for a few minutes) and then grill the chorizo sausage.

Method
- Heat the oven to 200°C ( 180°C fan or gas 6). Put the sweet potatoes in a large roasting tin and drizzle over the olive oil. Season well and roast for 20 minutes until softened and just beginning to colour.
- Scatter oven the chorizo and cook for a further 5 minutes. Remove from the oven and stir through the chickpeas. Serve on the bed of mixed herb salad with the tzatziki drizzled over.
